  • Sourdough Muffins

    What are English Muffins called in England?

    Muffins? Breakfast muffins? Half a Benny?

    As I grilled these doughy disks on my cast iron skillet this morning with my daughter lingering over my shoulder hoping she could nab one for her breakfast, I wasn’t really pondering such things.

    As 2022 progresses and I recall back to my sourdough goals for this year — in other words, baking with my starter by branching out beyond breads and sandwich loaves — I warmed up and fed my starter yesterday with the intention of attempting to make some English Muffins.

    The recipe and process turned out to be much quicker and much simpler than I’d expected.

    Unlike the bagels I’d baked about a month ago, the full cycle for this recipe was short and took only about fourteen hours, from idea to tray of hot bready goodness including the twelve hour overnight proof on the counter.

    The dough was essentially a wetter, sweeter version of my basic bread, including the addition of liquid sugar (I chose maple syrup, because yes, we just have jugs of maple syrup in the cupboard, ohhhh Canada!) and replacing the water with milk.

    360g bread flour
    240g milk
    100g active sourdough starter
    20g maple syrup (or honey)
    8g salt
    cornmeal for dusting

    I combined the ingredients (minus the cornmeal) into a fully hydrated dough ball. This took about an hour of resting and folding and resting and folding. My timing here was the critical part, as this needed a twelve-hour counter-top rise. I had this ready to proof for about 7pm so that it would do it’s thing while I slept.

    The next morning, the dough ball having easily doubled (or more) in size, I patted it out on a floured surface with my fingertips until it was about 2cm thick. This got cut with a “biscuit cutter” into rounds about 10cm across. (My biscuit cutter was a drinking glass.) I dusted the eight rounds with cornmeal and set them onto a cookie sheet to rest and rise for about one more hour.

    I set my cast iron skillet over a medium-low heat. The key here is getting the muffins hot enough to cook evenly through to about 200F, while not over-cooking the outside. Low and slow. We’ve bought enough English Muffins over the years that I have a pretty good eye for what a finished product should look like, but I still used my digital thermometer to make sure they were cooked through. This was mostly me setting the kitchen timer for four minute intervals and flipping only on the beeps. It’s tempting to flip-flip-flip, but I think these benefit from minimal fussing.

    For my next attempt (some day in the future) there are some minor adjustments I will make, specifically around the cook time and temperatures, but the only advice I can offer here is that you need to get to know your equipment and work along with it for this recipe. I’m still learning too, but my final product turned out pretty good for a first attempt.

    The biggest surprise was the timing. I was expecting this to take much longer. Sure, fourteen hours is not a last minute meal idea, but in the world of sourdough it’s essentially instant fast food, and the type of thing I could see putting together the night before needing to make a family breakfast with unexpected company.

  • Lotsa Bread

    I’ve been thinking about bread a lot more than I’ve been writing about it here.

    Eating it too.

    I crossed yet another sourdough milestone this past weekend when I extracted from my hot oven a pair of pandemic bread loaves, loaves numbered two-hundred-and-forty-nine and two-hundred-and-fifty.

    Yes, I keep track.

    And yes, I’ve baked 250 loaves of sandwich bread in the last two years since that fateful day when I got sent home from the office to work in my cold basement.

    My starter, which turns three next month, is mature and active and beautiful. I pulled it from the fridge that same afternoon to warm up on the counter, prepping my plans for bread baking even before setting up my laptop for work.

    Two years of bread. Three years of sourdough. Two hundred and fifty sandwich loaves and so many other random baking experiments that had I not kept careful record of I might not even believe it myself.

    In that time…

    My flour collection has rotated through all purpose bags, to generic supply-chain shortage stocks, to small mill local flours, to artisan bakery bags, and grocery store best for bread varieties.

    I’ve played with beers replacing water.

    I’ve dabbled in mix-ins and spices and cheeses and sweetness levels.

    I’ve made bagels and pizza dough and buns and pan bread.

    It’s been two years of hundreds of hours of baking that has taught me so much about bread yet has only just whet my appetite to learn more. And there is lots more to learn.

    I go back to the office (at least part time) in a couple weeks and the mid-day bread baking breaks will shift to accommodate that new life.

    It’s a little sad, but then again, when I started this and was only a couple dozen loaves in I joked with my daughter that someday she would inherit the “pandemic bread starter” that bit of flour and water and yeast that helped sustain us through a weird time in history.

    And it really did.

  • Cross Country

    Last July, right smack dab in the middle of 2021, one of my running friends suggested that a few of us sign up for a race.

    This wasn’t unusual. We sign up for races all the time, and even many virtual races lately.

    This race was a big one, though. A year-long virtual team run spanning every province of Canada in an effort to cumulatively run ten thousand kilometers in one year, from the West coast to the North coast and then over to the East coast.

    We signed up. We ran. We tackled The Big Canada Run.

    And on this past Sunday morning, as a ten klick team run through the fresh weekend snow, we logged our last bit of mileage.

    We finished.

    In a little more than eight months, nine of us managed to log a remarkable ten thousand kilometers (or about six thousand two hundred miles for you still stuck in imperial measures.)

    Day after day, week after week. Competing against over two hundred other teams doing the exact same thing.

    One run at a time, a few kilometers here and bunch more over there. Training runs, group runs, solo runs through the snow, epic slogs through the heat, half marathons, ultras and even just jogs with the dog.

    I’ve done virtual races before, but this is by far the largest.

    I’ve logged my own mileage for over a decade and often recorded high numbers over the course of a year, but never computed my distances with a team to reach such a monumental milestone.

    Epic races are just epic goal-setting exercises. They let us see ourselves and our efforts against a backdrop of something so much bigger than ourselves or our individual footsteps. And running across a continent is so much bigger than running the loop around my park … even if I did have the help of eight of my friends.

  • ch-ch-ch-changes.

    It’s been nearly a month since I’ve dropped a post here, I realize, but with the world swirling in chaos and my life sometimes feeling like a lot of the same, I now find myself needing to write yet another explanation post.

    I’ve been thinking a lot about my professional life these days.

    I’m locked up in golden handcuffs, as they say, doing a job that pays entirely too well, can be occasionally cushy, and gives me a lot of flexibility in life. On the other hand, I have no passion for the work, I’m a cog in a bureaucracy and rarely seem to have any effect on anything, and my work life is a never-ending series of video meetings on what amounts to the same general topic day, after day, after day… after day.

    It’s boring and frustrating and unremarkable all at once.

    I’ve been reading about midlife career change.

    I’ve been talking to people who have pulled the plug on something in their forties and reinvented themselves.

    I’ve been pondering budgets and possibilities and realities of economy and family and obligation and how it all fits together into a giant jigsaw that is my career choices.

    This morning I took the first tenuous step towards a massive change.

    Not a plunge. Not a flying leap. Not an irreversible veer.

    A step.

    And it may amount to nothing. Or it may turn out to be everything.

    Only time will tell.

    But if and when something comes out of that first step, and it’s time to take a second… third… and on and on, then I’ll likely have a lot more stuff to say, and be able to be much less cryptic about it.

  • One Million

    Call it civic pride or call it mathematical curiosity, either way the latest census data for Canada was released this week and my city officially recorded one million residents for the first time in history.

    One million.

    That’s a lot of neighbours, most of whom I’ll probably never ever meet. A great big crowd, busy streets and an ever-more bustling mini metropolis with which to contend.

    We sometimes talk about the switch from being a big little city to becoming a little big city, and what that means for everything from being a resident here, to welcoming visitors, to building and growing and changing now and into the future.

    Admittedly, it’s been a tough couple of weeks to think about the future of our city and my country. The crowds are pressing against each other and it’s getting uncomfortable in here.

    If you watch the news these days, Canada is abuzz for mostly the wrong kinds of reasons, including blockades of borders and an occupation our cities by protests that have been spiraling into more complex political movements. Even last week, as I drove south of town for a family event, we passed on the highway a parade of (literally and at least) a thousand flag-waving semi-trucks, tractors, SUVs, and other supporting vehicles en route to my city to protest vaccine and masking rules. And whether you’re on one side, the other, or stuck in the fuzzy middle it’s hard to sit back and watch with anything resembling hope when such protests are driven mostly by heated emotion, divergent ideologies, and ever deeper pits of self-affirming misinformation.

    Alas, my golden rule, and one that has served me well living in a big little city — and now living in a little big city too, perhaps — is whenever possible to lift those around you instead of pushing them further down.

    You can interpret that how you will, but in this great big city, and this great big world, one million of us or seven billion folks spread across the globe, I recommend to try it for a few days.

    Stop honking. Stop blocking. Stop insulting. Stop trying to crush others to climb for yourself a little bit higher onto the pile.

    Instead, elevate someone else’s opinion, even for just a moment. Clear a path so someone else can climb a step up. Complement a friend and give a stranger a boost. Think what would happen if we all did that.

    One million people might feel less like a crowd and more like a community.
